Make Ahead Breakfast Sandwiches

These guys can be made ahead of your trip, wrapped up and frozen until needed. Everyone can personalize their own to please even picky eaters! 

Equipment:

  • Rimmed baking pan (8-inch by 8-inch)
  • Non-stick spray or butter to grease
  • Medium-large bowl

For freezing and reheating: 

  • Plastic wrap (storage, please don’t reheat your sandwiches over the fire in plastic)
  • Foil

Ingredients:

 

  • 12 large eggs or 1 ½ cups liquid egg
  • 4 English muffins
  • 4 thick slices of ham
  • ½ cup shredded cheese (or more, live your life!)
  • Diced bell peppers
  • Diced onions
  • Spinach
  • Mushrooms
  • ½ teaspoon onion powder (omit if using onion)

    Salt and Pepper to taste

*Optional; you can add veggies as well to the egg bake

Instructions:

  1. Preheat oven to 375°F. Spray your 8-inch by 8-inch baking pan with non-stick spray or butter.
  2. In a medium-large bowl, use a fork or whisk to mix egg with seasonings. You’ll know you’ve mixed enough when it’s homogenous and there are no streaks of egg white left. 
  3. If using additional veggies, sauté until soft in a pan and let cool slightly before stirring into egg mixture. If the veggies are too hot you will begin to cook the eggs.
  4. Transfer egg mixture to baking pan and bake until firm, about 18-20 minutes.
  5. While eggs bake, split your English muffins and toast them. 
  6. When the eggs are almost done sprinkle with cheese and let bake until it melts, about 2 minutes.
  7. After the egg bake has cooled completely (you can do this in a fridge when the pan is no longer hot to the touch), slice into four squares. Assemble each sandwich with a slice of egg, ham, and any additional toppings you want. 

Freeze and Store:

After sandwiches are assembled, wrap them tightly in plastic wrap or foil, they can be frozen for up to a month.

*Storage tip: If you’re making large batches or different flavors, place the wrapped sandwiches in labeled containers or large freezer bags, removing as much air as possible, before freezing. 

To Reheat:

Sandwiches can be reheated in the microwave or by the fire.

Microwave: Unwrap sandwich and tightly wrap in paper towel. Reheat in the microwave for 1-2 minutes on defrost. Microwave as normal for an additional 1-2 minutes or until hot. 

Fire: Keep the sandwich wrapped in foil (NO PLASTIC) and reheat by the fire until hot. Time will vary.
