Salad Wraps 3 Ways
Wraps are one of the easiest meals to make and can be easily modified to suit everyone. Here are three simple wrap recipes to inspire you!
Directions:
For each wrap, layer the ingredients with the dressing spread over the tortilla leaving space around the edges and then arrange the toppings in a bank down the center before rolling up.
Rolling tips!
Fold the bottom of the wrap up just over the filling, fold in the sides and then roll the rest of the way. You can also tuck the top down burrito style if you’re wrapping these up to take on the go.
Cobb Salad
For each wrap you will need:
1 spinach or whole wheat tortilla (about 8 inches)
1-2 tbsp blue cheese dressing or ranch
2 slices of avocado
½ cup shredded cooked chicken
½ medium tomato, sliced
½ cup spring salad mixed greens
2 cooked bacon strips
½ -1 tbsp sliced ripe olives
½-1 tbsp crumbled blue cheese
Chicken-Caesar
For each wrap you will need:
1 tortilla (flour or whole wheat) (about 8 inches)
1-2 tbsp cesar dressing (see the recipe below for a great homemade option)
2-3 romaine leaves
1-2 slices cooked bacon, chopped
¼-½ cup sliced cooked chicken
Handful shredded parmesan cheese
Veggie:
For each wrap you will need:
1 tortilla (flour/tomato/spinach/whole wheat) (about 8 inches)
1-2 tbsp hummus of choice
1 lettuce leaf (romaine, iceberg, butter)
¼-½ carrot, shredded or grated (can also be sliced for more crunch)
2-4 cucumber sticks and/or avocado slices
1 tbsp tomato salsa or chopped tomatoes
Handful of grated cheese (cheddar, monterey jack, etc.)
Homemade Caesar Dressing:
- 2 small garlic cloves, minced
- 1 tsp anchovy paste
- 2 tbsp fresh squeezed lemon juice
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 cup good quality mayonnaise
- ½ cup freshly grated parmesan cheese
- ¼ tsp salt
- ¼ fresh ground black pepper
