Buffalo Turkey Meatballs
Prep, cook, and freeze these at home to reheat at camp, slather in sauce and enjoy a play on a meatball sub.
Equipment:
- Large mixing bowl
- Blender
- Ice cream scoop (optional, but helps you make your meatballs all the same size)
- Baking sheet + silicone mat (or tin foil + parchment paper)
Ingredients:
- 3 lbs ground turkey
- ¾ cup breadcrumbs
- 1 tsp salt
- 6 ounces crumbled blue cheese
- ¼ cup buffalo sauce
- 1 bunch scallions/green onions (about 2-4)
- 3 eggs
- 3 garlic cloves
- Hoagie rolls
- Shredded lettuce
- Sliced tomato
- Pickles
- Ranch
Instructions:
- Preheat your oven to 350°
- Add ground turkey, blue cheese, salt, and breadcrumbs to a large bowl. Mix to combine.
- Add eggs, buffalo sauce, scallions, and garlic to a blender and blend until smooth. Add the wet ingredients to the meat and mix.
- Use an ice cream scoop to scoop out the meatballs onto a parchment lined baking sheet (about 2 tbsp average), and bake for 30 minutes or until cooked through and the internal temperature reaches 165°
- Douse meatballs in buffalo sauce and toss to coat evenly.
- Slice a hoagie roll in half, add ranch, lettuce, tomato, and meatballs, and enjoy!
