Cast Iron Potatoes
About 8 servings
Have this as a simple side in support of the grill’s main dish for the evening. Cooking alongside the grilling meat on your barbeque and let the smoke permeate the potatoes for a deeper flavor.
Equipment:
- Large cast iron skillet
Ingredients:
- 3 lbs baby potatoes
- 2 tbsp extra-virgin olive oil
- 1 tbsp fine chopped fresh thyme OR 1 tsp dry thyme
- Salt and pepper to taste
Instructions:
- Clean potatoes well and add them to your skillet with just enough water to cover them.
- Place the skillet over the fire or the grill of your barbeque with the lid closed (heated to 450°F). Cook until all the water has evaporated, about 30 minutes
- Continue to cook potatoes, rolling them gently every so often so their skins become crispy semi-evenly, and just begin to break, about 10-15 minutes.
- Remove from heat, drizzle with oil, and sprinkle with time, salt, and pepper.
