Makes 12 muffins
Equipment:
- Muffin tin and liners
- Large bowl
- Measuring spoons
Ingredients:
- 1 ¼ cups all-purpose flour
- ¾ cup rolled oats
- ¾ cup brown sugar
- ½ tbsp baking powder
- ½ tsp salt
- 1 ¼ cups milk
- ½ cup peanut butter (crunchy or smooth)
- 1 egg
- 1 tsp vanilla
Notes: For a less-sweet muffin use natural peanut butter.
Instructions:
- Preheat your oven to 375°F
- In a large bowl, mix your egg, vanilla, milk, sugar, and peanut butter together.
- Add your oats to the wet ingredients and mix well.
- In a separate bowl, mix together your remaining ingredients: flour, baking powder, salt. Add dry to wet and mix until just combined. Avoid over mixing or your muffins will be tough. Muffin batter can have a few lumps and does not have to be completely smooth.
- Spoon your batter evenly into 12 muffin cups
- Bake in your preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Serve with butter or your choice of jam or jelly!
