Pesto Tomato Wraps

A vegetarian lunch wrap that you can take on the go and tastes like a Caprese salad (add some balsamic vinegar as a light drizzle if you want!)

Ingredients:

  • 4 soft taco size wheat tortillas
  • 8 tablespoons prepared pesto
  • 2 Roma tomatoes, sliced
  • 1-pound fresh mozzarella sliced
  • 8 small leaves fresh basil torn

Optional: Want extra protein? Add some cooked chicken as well!

Instructions:

  1. Slice tomatoes and mozzarella with equal thickness (recommended about 1cm.
  2. Lay tortillas flat and spread equal amounts of pesto on each. Optionally, drizzle a little balsamic vinegar on top. 
  3. Evenly divide and layer tomatoes, mozzarella and basil on each tortilla down the center like shingles to get a little bit in every bite.
  4. Fold the bottom up, then one side over and roll up!
