Peanut Butter Muffins

Love a good peanut butter and jelly sandwich? Serve this muffin with your choice of jam or jelly and enjoy!

Makes 12 muffins

Equipment:

  • Muffin tin and liners
  • Large bowl
  • Measuring spoons

Ingredients:

  • 1 ¼ cups all-purpose flour
  • ¾ cup rolled oats
  • ¾ cup brown sugar
  • ½ tbsp baking powder
  • ½ tsp salt
  • 1 ¼ cups milk
  • ½ cup peanut butter (crunchy or smooth)
  • 1 egg
  • 1 tsp vanilla

Notes: For a less-sweet muffin use natural peanut butter.

Instructions:

  1. Preheat your oven to 375°F
  2. In a large bowl, mix your egg, vanilla, milk, sugar, and peanut butter together.
  3. Add your oats to the wet ingredients and mix well. 
  4. In a separate bowl, mix together your remaining ingredients: flour, baking powder, salt. Add dry to wet and mix until just combined. Avoid over mixing or your muffins will be tough. Muffin batter can have a few lumps and does not have to be completely smooth.
  5. Spoon your batter evenly into 12 muffin cups
  6. Bake in your preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  7. Serve with butter or your choice of jam or jelly!
