Crustless Quiche
Great for breakfast or lunch, you can easily make this quiche your own! Serve with a salad and some crusty bread for a deceptively fancy meal.
Ingredients:
- 6 ounces cooked ham, cut in 1/4 inch cubes
- 3⁄4 cup frozen broccoli cuts, thawed
- 2 ounces shredded Monterey jack pepper or Swiss cheese
- 2 ounces cheddar cheese
- 8 large eggs
- 1⁄2 cup milk
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- ½ tsp dry mustard
Substitutions and Additions:
- You can substitute most any meat, like diced chicken breast, pastrami or sausage for the ham.
- Swap our spinach instead of broccoli.
- Add diced red or orange peppers and onions, this will require additional cook time.
- Additionally, you can add chopped tomatoes, however this addition will require extra cooking time.
Instructions:
- Heat oven to 375°F and grease a 9-inch pie plate.
- Scatter ham, broccoli and cheeses evenly on a pie plate.
- Whisk remaining ingredients in a bowl until blended. Pour into the pie plate.
- Bake for 40 minutes or until firm. Cover the top with foil if it starts to get too brown.
- Cut into wedges to serve.
Notes: This stores in the fridge for up to three days, and can be frozen as well.
