Crustless Quiche

Great for breakfast or lunch, you can easily make this quiche your own! Serve with a salad and some crusty bread for a deceptively fancy meal. 

Ingredients:

  • 6 ounces cooked ham, cut in 1/4 inch cubes 
  • 3⁄4 cup frozen broccoli cuts, thawed
  • 2 ounces shredded Monterey jack pepper or Swiss cheese
  • 2 ounces cheddar cheese
  • 8 large eggs
  • 1⁄2 cup milk
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon pepper
  • ½ tsp dry mustard

Substitutions and Additions:

  • You can substitute most any meat, like diced chicken breast, pastrami or sausage for the ham. 
  • Swap our spinach instead of broccoli. 
  • Add diced red or orange peppers and onions, this will require additional cook time.
  • Additionally, you can add chopped tomatoes, however this addition will require extra cooking time.

Instructions:

  1. Heat oven to 375°F and grease a 9-inch pie plate.

  2. Scatter ham, broccoli and cheeses evenly on a pie plate.

  3. Whisk remaining ingredients in a bowl until blended. Pour into the pie plate.

  4. Bake for 40 minutes or until firm. Cover the top with foil if it starts to get too brown.

  5. Cut into wedges to serve.

     

Notes: This stores in the fridge for up to three days, and can be frozen as well.
