Cast Iron Potatoes

About 8 servings

Have this as a simple side in support of the grill’s main dish for the evening. Cooking alongside the grilling meat on your barbeque and let the smoke permeate the potatoes for a deeper flavor. 

Equipment:

  • Large cast iron skillet

Ingredients:

  • 3 lbs baby potatoes
  • 2 tbsp extra-virgin olive oil 
  • 1 tbsp fine chopped fresh thyme OR 1 tsp dry thyme
  • Salt and pepper to taste 

Instructions:

  1. Clean potatoes well and add them to your skillet with just enough water to cover them.
  2. Place the skillet over the fire or the grill of your barbeque with the lid closed (heated to 450°F). Cook until all the water has evaporated, about 30 minutes
  3. Continue to cook potatoes, rolling them gently every so often so their skins become crispy semi-evenly, and just begin to break, about 10-15 minutes.
  4. Remove from heat, drizzle with oil, and sprinkle with time, salt, and pepper.
